Riced Veggie Rice

I'm sure you've heard of cauliflower rice, but did you know that you can "rice" pretty much any vegetable?! Cool! Okay, so you're not completely sold on veggie rice or not ready to give up normal rice? Here's one of my favorite ways to sneak in a few extra veggies, while improving the portion size of rice in a meal: mix the veggie rice and the normal rice!



* Here I show you broccoli + rice, but this can be done with a variety of veggies, like cauliflower, sweet potato, beets, zucchini, carrots, etc. (essentially, it's just tiny, chopped up veggies!)


This makes a great side dish, stir fry base, or even as a salad topping!


This is a silly-simple recipe, one that I almost didn't post as a recipe, because it is so open-ended. So take this as you will and hopefully it will supply you with some inspiration on how to incorporate this into your meal planning and preparation!



Riced Veggie Rice


Ingredients:

  • Rice

  • Vegetable (broccoli)

  • Seasonings of choice

Instructions:

  1. Prepare the vegetable rice in a food processor (or purchase pre-made)

  2. Prepare white or brown rice on the stovetop or pressure cooker, following the instructions on the package.

  3. Gently fold in the vegetable rice into the normal rice and mix well.

  4. Use in any rice recipe or season and serve as a side dish.

  5. Store leftovers in an airtight container in the fridge.
