Happy Humpday my wonderful friends!! I am crazy busy, so I'm going to make this post short and sweet!
My stress levels have been at an all time high, and with the temptation of unhealthy food lurking around every corner, I know that in order to keep my sanity, I need to keep my diet clean. Eating a bunch of crap leaves you feeling like crap, and I don't know about you, but that's the last thing I need when I'm stressed out.
But cooking and preparing food takes a lot of time, and who's got time for that?! This Hamburger and Rice Skillet is packed with protein and healthy fat, veggies, and carbs to keep you functioning and giving your brain and body all the energy it needs to GET ISH DONE! Plus its totally satisfying: there's just something about a savory, flavor packed bowl of warmness that makes me so happy.
This recipe is flexible and very simple. Add what you have on hand or what's on sale at the store. Leave out what you don't like- make it your own! For me, since I am a family of 1 (2 including my cat!) it makes PLENTY of food for at least 4 dinners. YES! I don't mind taking some time out to cook a meal that will last a few days. That's how I manage to eat healthy food every day that is enjoyable: meal prep baby! And you can cook it all in the same skillet = less dirty dishes!
So I'll cut straight to the good stuff:
Hamburger and Rice Skillet
Grass fed ground beef (1lb)
Rice (1/2 cup dry) cooked
Tomato paste (a few table spoons)
Canned diced tomato (one 14.5oz can)
Other ingredients to add:
*For the tomato paste and diced tomato, read the ingredients! There should be no added sugar, salt, or anything. (Calcium Chloride and Citric Acid are acceptable additives for preserving and firming canned food - these are fine)
*Always use grass fed meat, organic beef. The quality and nutrients are much higher in good quality meat. If you use cheap meat, you are better off skipping the meat all together. Trader Joe's has a great selection of grass fed beef that is very affordable. Shop smart when it comes to meat!!!
1. Add avocado oil, ground beef, onion, garlic and pepper (an any other veggies you'd like) to a large skillet and cook until the beef is cooked all of the way through
2. Add cooked rice and stir in
3. Add tomato paste and stir in
4. Add canned diced tomato and let sit for 5 minutes
5. Season to your liking: Oregano, Salt, Pepper Chili Powder.
6. Serve over steamed kale
(I cooked the sweet potato separately an added to the top, but you can cook it in as well, just make sure it gets cooked all of the way through so it's not hard!)
